Arriving on the scene from Colombias Tolima area we have what we are affectionately calling Cherry Pop. A naturally processed Colombia varietal that is full of stone fruit and soft fruit flavours, but most importantly we think tastes like an old fashioned cherry soda. Sweet, complex and vibrant but with a really rounded and well presented acidity makes this our new go to filter coffee.
Yeferson Olaya owns and operates Finca El Tesoro 1600 meters above sea level in the hills of Planadas municipality in the Tolima department of Colombia, 40 km from the municipality’s capital. Yeferson comes from a coffee producing family, with his father Nolberto operating his family farm Finca La Cinta nearby. Both are recognized in the area for their commitment to protecting the environment through their farming practices, and this commitment is carried on by the whole family.

This coffee brews quite quick in our water, so we would recommend grinding a little coarser than normal on your filter recipes.
