This coffee is something very different, something quite spectacular.
Represented by Daniele Ricci in last years world barista championships where he placed 2nd, this is a coffee that must be tasted to be believed. We have had comments like, fruit explosion, tropical juice, fresh watermelon and 90's Jolly Ranchers. It never fails to impress.
The Milán farm is 1,400 meters above sea level with young soils, rich in organic matter. Due to the specific environment of this area, there is a wide thermal range where daytime temperatures can reach up to 30 degrees Celsius and drop to 15 degrees Celsius at night. This combined with only a few hours of daylight due to the high presence of clouds leads to an extended fruit maturation period that allows the coffee to develop complex and unique flavours. With sister farms like The Riviera, located at an altitude of 1,700 metres above sea level, and the Buenos Aires farm at 1,500 metres above sea level, the Cafe Uba group produces exceptional and unique coffees every harvest.
Process
- 1. Harvesting of completely ripe beans
- 2. Anaerobic fermentation in cherries begins for 20 hours

3. After 18 hours, the coffee is pulped and left to ferment aerobically for 20 hours
- 4. After 18 hours of fermentation, the coffee is washed and goes through the solar drying process.
- 5. The coffee is taken to the marquees and left for 20 to 25 days in solar drying.
